Elizabeth's Easy Bean Burritos Plus

Need a fast and easy dinner without all that saturated fat? You can make this ahead and serve as needed. Plus, it freezes well!
Mix and gently heat:
1 cup cooked brown rice (preferably organic)
1 can Old ElPaso Fat free refried beans
1 can diced tomatoes & green chilis (like Ro-Tel)
Spread on whole wheat tortillas
Sprinkle a bit of vegan cheese
Add salsa, black olives, vegan sour cream to taste and roll!
Variations: You can make enchiladas by pouring a 1/2 can of green or red enchilada sauce in a 9x13 pan. Spread a healthy amount of the rice/bean mixture on whole wheat tortillas, sprinkle with vegan cheese, roll and place, seam side down in pan. Pour remaining enchilada sauce over rolls, sprinkle with more vegan cheese, cover with foil and bake until heated through.
